Grilled NY Strip with Red Wine Marinade
Three sirloin steaks, ready for the grill This marinade will work on filet mignon, rib eye steak, rack of lamb and any other red meat, really. Cook it with care for dear old dad!
Let's face it, Dad wants a grilled steak for Father's Day. You can add all the veggies and salads on the side, but he's really focused on a tasty piece of charred meat!! So give him what he wants. I've written this up as a NY Strip, but the marinade will work on a filet as well as a rib eye, even a rack of lamb, so take your pick. I use this basic steak marinade recipe all the time, but at the end, I mix in different ingredients for a different flair. It is never the same twice, which is great. I'll give you the base, then pick and choose your add-ins. Or just use it as it sits, it will not do you wrong.
MARINADE RECIPE:
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup GOOD red wine
- 1 T. fresh ground black pepper (more or less to taste)
- 1/2 T. dried oregano
- 1/2 T. dried thyme
- 2 T. grated garlic (or to taste )
- 2 T. or more fresh herbs, including thyme, oregano, and/or rosemary
Marinade add-ins - any of the below
For an Asian-inspired marinade, add 1 T. fresh grated ginger and a healthy squirt of Sriracha, and maybe a teaspoon or two of brown sugar or honey. A small amount of sesame oil could work here too. Rosemary is not traditional, but we're going for a "flair", so just do you.
For a Red Wine-Dijon marinade, add 1T. of Dijon or grainy mustard. It emulsifies the marinade and adds a lovely complexity to the flavor.
Our Costco steaks are ready for the marinade! I score the outer fat layer so it does not curl during grilling.
Marinate your steak for at least two hours, turning once, but you can certainly soak these longer, or even overnight with no harm. The soy sauce brings the salt to the party, so be judicious with salt should you choose to use it. Grill to your liking. I served mine above with a potato and egg salad (recipe coming), some steamed broccoli with lemon butter and sauteed mushrooms heaped in a generous fashion over the beef.
